Grown by several Native American tribes, Sweet Corn was introduced to European at the end of the 18th Century. Categorized as a cereal with high sugar content, it is picked when immature and prepared and eaten as a vegetable, rather than a grain. Cultivated for thousands of years in the Cordillera of the Andes, potato was brought back to Spain in the 16th century and then established throughout the East of France. Rubis is a variety of potato with pink skin while its flesh is pale yellow. This one is from Roussillon region in France. Rubis potato can be eaten in many ways, but it is best to brown them as it has the advantage of having good hold and not blacken when cooking.
Like all cereal grains, corn is primarily composed of carbs. It is rich in fibers (beneficial for digestion), vitamins (preventing ageing of cells) and minerals. Sweet Corn is particularly high in lutein and zeaxanthin, two carotenoids that may prevent cataracts and age-related macular degeneration (AMD). Starchy potato is rich in complex carbohydrates and proteins, which provide energy. It is also a source of vitamin C and potassium. when picked before maturity, are a little less rich in carbohydrates than others. They also contain proteins and fibers!
