Jack Be Little squash is believed to have been developed in the Orient, as pumpkins of this type are offered to the ‘Spirits’ by many in Thailand. These charming little orange pumpkins, 8 to 10 cm in diameter, flattened and ribbed, are ideal for eating although there are best known carved as jack-o'-lanterns for decoration around Halloween. The smooth flesh is very nutritious and low in calories and its sweet flavor makes it perfect cooked into sweet dishes, as well as savory ones.
Squashes are filled with Vitamins C and B which, as antioxydants, help preventing aging of skin, hair and nails as well as improving the immune system and fighting inflammations. Potassium, in good concentrations, helps memory retention, bone and muscle strength. The large seeds are high in oil and protein.
