Cultivated for thousands of years in the Cordillera of the Andes, potato was brought back to Spain in the 16th century and then established throughout the East of France. Bintje is a middle-early ripening variety bred in the Netherlands by a schoolmaster in the 1900s. The name, a diminutive of Benedict, was borrowed from one of his former students. This large oval-shaped potato with yellow flesh is now the most widely cultivated potato in France and Belgium.
Starchy potato is rich in complex carbohydrates and proteins, which provide energy. It is also a source of vitamin C and potassium. when picked before maturity, are a little less rich in carbohydrates than others. They also contain proteins and fibers!
