Categorized as a cereal with high sugar content, it is picked when immature and prepared and eaten as a vegetable, rather than a grain. There are currently hundreds of varieties across the world. Like all cereal grains, corn is primarily composed of carbs. It is rich in fibers (beneficial for digestion), vitamins (preventing ageing of cells) and minerals. Sweet Corn is particularly high in lutein and zeaxanthin, two carotenoids that may prevent cataracts and age-related macular degeneration (AMD).
