Also called chicory, Endive is one of the earliest plants cited in recorded literature. It was discovered by chance in 1830 by a farmer in Brussels, Belgium, who stored some chicory roots in his cellar planning to dry and roast them for coffee. He left his farm several months and when he returned, he discovered that the roots had sprouted small white leaves, crunchy and tender.
Both low in calories and low in carbohydrates, Endive is still packed with nutrients that makes it valuable for weight management. It is rich in vitamin B6 and folate, essential compounds for many important processes in the body, including energy metabolism and the normal functioning of the nervous system.
